These muffins look amazing. How did you prepare the carrots? In the photo they appeared to be finely chopped. My box shredder wouldn't produce anything near yours in appearance. Sandy P. Sandy, you're right, I chopped them in a food processor. Use whatever the finest holes are on your grater; that should be just fine. PJH
