How do you think these would freeze? I really want to make a batch right away but 12 muffins is just too many for my husband and I to consume before they go bad. I'm kind of worried about the filling getting the whole inside soggy if I freeze them. Generally, we don't recommend freezing baked goods that contain a cream cheese filling. You could make them without the filling and freeze and then use a cream cheese icing on them once they are thawed. ~Amy
