Interesting! A few drops of water will cause chocolate to seize, but enough water added to the chocolate will thin it to produce that lovely petit fours coating. In addition, you're mixing the water into the other ingredients before adding the chocolate, so it's not a straight dose of water. Happy baking! Laurie@KAF
