Hi Alice, for softer biscotti you could bake them less, but then they would be more like a cookie and won't have as long of a shelf life. There are some "soft biscotti" recipes out there. Often this type of recipe will contain more eggs, which will yield a cakier texture. Again, these won't last as long as traditional biscotti.
