I have always baked my "second bake" of biscotti standing UP. I also only bake them for 10 minutes at 350 and they are not rock hard. Interesting hint with the water spray. I always used a long, thin, serrated edge Bread Knife to cut and they don't crumble....unless you have BIG pieces of cho. or nuts.
