One suggestion that we find helpful when making a recipe for the first time; one that doesn't include a time frame for mixing, is look for the visual clues to when a dough is ready. The dough should be smooth and elastic. When you think it's done, take the dough out of the mixer, give it a couple of hand kneads on a lightly floured counter, then poke it gently with your floured finger. If it springs back quickly, it's done, if your finger leaves an indentation, it still needs more time in the mixer. This recipe actually states that the dough may look a little rough, but typically, you want the dough to look pretty smooth. We hope this helps and happy baking!
