Hi Chris, they should be on the chewy side if made with our flour, but they can be especially so (though they wouldn't be as light) if you made them with our Unbleached Bread Flour. You'd just find that you need to add 1-2 extra teaspoons of water per cup of flour since it would absorb more moisture.
