Yesterday I came across your April Fool's blog entry and laughed myself silly at the wonderful writing about the kinds of errors and disasters we all endure from time to time. Scared the cats, and everyone else in the household. But I thought to myself, I don't think I've ever left out an ingredient; I must just be lucky. Today I set out to make the Crusty European-Style Hard Rolls (made the starter last night). I mixed the dough pretty early this morning, and as I tucked the taut little bundle into a bowl to rise, yesterday's reading crossed my mind. Hmm, maybe I'd better review the recipe, simple though it was. No! You guessed it -- I forgot the salt. I didn't want to start over, and I was almost out of flour. So I did the only thing I could think of -- scattered the salt on my counter, plopped the dough down, and started kneading. It took several minutes until I couldn't feel the grains of salt in the dough. I didn't know if there was enough moisture in the mix to dissolve the salt, but I figured it was worth a try. Hours later: success!! Crisp rolls with lovely Italian-style insides. I even got the oven spring. So thanks for the bullet-proof recipe, and thanks to all the contributors to the April Fool's blog comments to give me the courage to try saving the dough.
