I grew up in South Wales eating welsh cakes and still make them - my grandmother made them with half lard half butter so I still do the same. I've never had them with cinnamon - mixed spice is more common. Cinnamon is easier for Americans to access, Deborah; that's why I went in that direction. Mixed spice would certainly be more traditional... PJH
