Just returned from a 2 week trip to Wales. Of course I had to try the Welsh Cakes and I am hooked. I noticed that vegetable oil was used for by many bakers and they were delicious. My husband is lactose intolerant so he was delighted. I had tried one made with butter and found the use of either shortening yield a good cake. Could you provide a conversion to vegetable oil for your recipe?
