My granddaughter is 5th generation to make Welsh Tea Cakes. Reading thru.. your recipe, I find one difference in your recipe. We use 1 tsp of baking soda along with baking powder. Grandma taught me to test my iron baking griddle for correct heat by dropping one drop of water on the pan. If it skipped across the griddle, the griddle was ready to use. We cut the cakes in triangles and serve them on Holy Saturday.
