I have some Cabot reduced fat cheddar - I think the 50% - would that be OK? Maybe not quite as tender, but do you think it would ruin it? I also like the idea of half white whole wheat flour. This looks so delish! The 50% reduced fat would be just fine. Enjoy! ~Amy
