Thanks for your very clear instructions and photos. I was wondering whether I can substitute milk or water for the eggs - for a friend who is allergic to them? I think you could substitute some potato flour and water; add 1/4 cup potato flour or potato flakes to the flour mixture, and use 1 3/4 ounces of milk combined with the water for the liquid. The potato flour will add the tenderness and moisture that the eggs provide, and the milk will help the dough color up nicely. Susan
