Hi Alex, if you allowed the dough to rest overnight at room temperature it will have over-fermented and that would explain the sour smell. Whenever you need to put dough on hold I would refrigerate it (wrapped up well so it doesn't dry out in the fridge). I wouldn't try using this dough if you left it out at room temperature overnight.
