Re the maple meringues.. can maple syrup be substituted or would the moisture content upset the balance of the meringue? Lee, I haven't tried maple syrup, but here's what I think: it would be better to use maple flavor. The syrup would be lost, flavor-wise, unless you used so much of it that it would then upset the liquid balance. PJH
