I'm sorry for the delay in responding to your earlier question! We recommend being very cautious when reducing sugar in meringue cookies because sugar does play a very important part in both the flavor and texture of this type of cookie. You're welcome to experiment, but I would suggest only reducing the sugar by 10%, which would be about 18g or about 1 1/2 tablespoons less sugar in this recipe.
