I really like the comment by "webdiva" about using vanilla wafers for "pennies." I've been using vanilla wafers in lieu of Graham crackers for the crust in my full size cheese cakes with great success. Ground-up shortbread cookies also works great as a change of pace from boring old Graham crackers as does ground up Biscotti. Give any of these a try and you too will be saying "YUM" in no time.
