It seems to me this filling would be perfect for cheesecake "pennies" -- the tiny little cheesecakes you make in mini-muffin cups by putting a whole vanilla wafer in the bottom and spooning the filling on top. Baking time is considerably reduced, of course, and you can still top them with Solo raspberry pastry filling or with cherry pie filling. And they're very habit forming. Yum! The trick, though, is to get really good vanilla wafers.
You're absolutely right - this filling would be perfect for those cheesecake minis. I've always loved those... even though they usually call for no-bake cheesecake, I know they'd work just fine with a baked version. Enjoy - PJH
