These bars look great and I'm going to make them but I want to know if 1/4 to 1/2 c. less sugar was used, would it alter the recipe too much? I'm comparing to the Kraft NY one, which uses 1 c. sugar, 4 eggs and 2/12 lbs. cream cheese. I made it a couple of months ago and it was delicious. Also, the basic cream cheese pie recipe calls for 1/2 c. sugar, 2 eggs, 1lb. cheese, so I was wondering if this one is a little sweeter. sometimes, I try to adjust the butter in the crust if I can, but you have to do that depending on the amount or type of crust/crumbs being used. some recipes seem to use alot of butter for a small amount of crumbs and you could change the sugar according to your preference. Is it okay to experiment with cheesecakes without having disasters? Of course it is okay to experiment with a recipe to suit it to your tastes and needs. My suggestion is to make your experimental changes as gradually as possible in order to avoid complete disaster or disappointment. I would recommend reducing by 1/4 cup of sugar and adjusting again from there. ~Amy @KAF
