My Italian Aunt (an awesome chef) told me to start a pot of boiling water before shaping the gnocci. form one or two and cook them. If they dissolve, add a sprinkle of flour and try again. ~Inez Thanks for sharing that great tip Inez. It's kind of like baking a test cookie to see if the batch is right. Terrific! ~ MaryJane
