Those are actually an entirely different type of gnocci called "Parisian gnocci." You can google that for recipes, pictures, etc., but they shouldn't ever be confused with the potato-based, Italian ones. The Parisian ones are made with choux paste--what you'd normally use for eclairs, profriteroles, cream puffs and gougeres. ;)
