This may be a basic question, but I've never understood if you are using parchment, why it is necessary to spray the pan with non stick as well as the parchment. Thanks for the tip! Al It's a great question Al. When working with tender cakes and baked goods that you need to remove from the pan in one piece, every bit of help with sticking is a plus. Spraying before and after adding parchment is the "belt and suspenders" approach, ensuring that your cake will come right out of the pan and right off the parchment without a hitch. ~ MaryJane
