Hi Caite, are you referring to our Belgian Waffle Mix? If so, the barley malt flour (or enzyme) added to this mix isn't there as a flavor element, but to correct for enzyme activity. However, if you'd like to add some Malted Milk Powder to this recipe, you could certainly do so. I would recommend substituting 3-4 tablespoons malted milk powder in place of the maple syrup. If need be, you could add a little more milk to adjust the consistency of the waffles, but it may not be necessary.
