Hi, Sunni! Unless otherwise specified you'll want to cover your dough with a lid or loosely drape it with plastic cling wrap in order to stop your dough from drying out and prevent dust and debris from getting in. (The latter is especially key if you have furry pets!) It may sound silly, but I keep shower caps in my kitchen just for this purpose. They're reusable, washable, easy to store, and stretch over the tops of all of my different sized bowls. Happy baking!
