These sorts of discrepancies aren't surprising, which is a big part of why we're always telling folks to weigh their ingredients when possible, and when not possible, and especially with flour, to use the fluff, sprinkle, and scrape method. As to why your dough didn't behave as it should have, there might be a number of reasons. Sometime our yeast is a bit old and doesn't react as it should, or even the weather can cause some issues.
