Me too... really frustrating when those traditionally shaped buggers pop open. I think this folding technique is much more sensible, and at least to my eye, has a better presentation.
(I like my symmetry LOL!). So the question is, why the potato flour/flakes? This is the first time I've seen this and I'm curious. But you're right, in the end no matter how they look, they fly out of the basket! Thanks for demystifying how to make these tricky guys!
