Hi Melissa! An overnight rise during the first rest time is preferred to prevent them from over-proofing. With this method the second rise will take a little longer because of the cold dough, you'll want to go by how the shaped rolls look as they won't come fully to room temperature. If you would like to try refrigerating the shaped rolls, they can stay in the fridge overnight but you want to be quick about shaping the rolls so they don't have too much time at room temperature and start rising again.
