Thank you! So the preferred method is to do the first rise in the fridge vs the second? I saw an earlier post also stating they could be shaped and put in the fridge for the second rise - but don’t know how long they could stay in the fridge before baking straight from there. With the method you stated, would the second rise take closer to 1 to 1hr 15min because of the cold dough? Thanks again
