Hi, Kim! We are familiar with this lovely buttercream! We did find that it was a bit finicky, though, and that home bakers often got inconsistent results. We want to make sure that the average baker can have a really consistently positive experience with the recipes we publish online, which is why we haven't featured it. But it's definitely a nice option if you've got the technique nailed down!
