I was about to make the same comments as akane86 and Mercedes. I really recommend the idea of using a poolish (100% hydration) the night before, which what I usually use. And although the traditional Roscon hasn't any filling or cuts, we do put candied fruits on top. This is in any case a wonderful variation, and it looks delicious!
