Sounds like your oven might be running a bit hot. If you like how brown your crust was, and the interior of the loaf doesn't seem too dry, then that's great! However, you might want to keep it in mind that things could bake more quickly in your oven, so try testing for doneness (on whatever you're baking) earlier next time. Enjoy the Thermapen fun!
