Years ago in Connecticut, a French friend of mine would make 9 or 10 French meat pies for New Years. She simmered the meat and spices in a huge pot overnight. When the mixture cooled, she would skim the spicy fat that rose to the top and use it as a spread for hot toast - delicious. The spread had a French name that I cannot remember. Does anyone know what it is called?
