Hi Lisa, unfortunately yeast-raised bread and sourdough bread recipes generally don't work with any type of gluten-free flour used as a substitution flour because so much of the rise and structure of this type of baked good depends on the gluten that wheat flour provides. For bread recipes like these, your best bet is to find a similar gluten-free recipe and use the type of GF flour recommended in the recipe. We don't have a gluten-free version of Panetone Bread on our website at this time, but you could certainly make these Panetone Muffins with our GF Measure for Measure flour in place of the unbleached all-purpose flour called for in the recipe. Baking time may be slightly longer for the gluten-free muffins, but check at the time recommended in the recipe, and then reset the timer from there, if necessary.
