I just used this method with the Perfect Pillowy Cinnamon Buns recipe for a family event, and it was amazing! I baked them in metal pans, froze them right in the pan, put in the fridge overnight to thaw and brought to room temp before the second bake. I also poured a tablespoon of heavy cream on the top of each bun before both of the bakes. My family said they were the best cinnamon rolls they had ever had, and my sisters are both expert bakers! So incredibly special.
