You'll want to make sure that you don't put pies in glass or ceramic straight from the freezer to the oven or fridge to oven unless the manufacturer's info states specifically the pan can go from cold to hot temps. If you really don't want to worry about thermal shock breakage, it would be best to use a metal pan.
