Hi Abrielle- In regards to brushing the inside of your crust with egg-white, it wouldn't really be a problem for a frozen crust, but it also won't really help you much I don't believe with a fully raw pie. Generally, you would use an egg wash to seal a fully baked crust. I think the bread crumbs, etc would be much more helpful in this case. Covering the pie is not related to whether or not you freeze it, but you can feel free to cover your pie crust with a crust shield or foil whenever you feel it is fully browned.
