Saffron plays a big role in the unique flavor and color of these rolls, but we take your point, Kristin. Baking without it won't change the way these rolls bake, they'll just taste a little more like a plain, dinner roll. You could try adding a small pinch of turmeric for the color, but be careful not to add too much, as the flavor is strong. However you do it, we hope you two have fun with it! Mollie@KAF
