Transition of wheat recipes to a gluten free version is usually experimental, and may take a few bakes or versions to accomplish good baked products. It might be best to do a quick on line search for a gluten free version for this holiday season, so you can work with a recipe that someone else has experimented with before publishing their successful gluten free version.
