Please make a gluten-free version! I tried your recipe with King Arthur gluten-fee all-purpose flour and it was a total disaster. I added a heaping teaspoon of xanthan gum, thinking that would help, but the dough was so crumbly that rolling it out wasn't an option. A shame to waste so much saffron!
