I wonder about leaving the cakes in the bake and give pans. If you're going to age them and brush them with rum or whatever for weeks, they won't get the full benefit if it's only brushed on top. Jean, the syrup seems to run down the sides just fine; the paper pans separate a bit from the cake. PJH
