@vibeguy - you are right about coconut oil sometimes being too greasy for baking - that's what happened when I used it for crackers. However I LOVE brownies made with coconut oil. Probably the coconut/chocolate combination of flavors is the reason. It is good to read that others have made these cookies successfully with butter. I think that is what I will try. My parents are coming for Thanksgiving and are both gingersnap-aholics. :)
