Coconut oil has been really disappointing for me in cookies. It's got such a low melt point that it leaves a sheen on your lips and fingers that is distinctly "greasy" rather than "rich". It's awesome in whoopie pie filling, though. Thanks for the info. - I've never baked with coconut oil... Good to get some real-life experience here. PJH
