What a sweet idea, to remember your niece's birthday how you did! Very anti-"16 Candles" :) Your cupcakes look delicious and perfect - even when I use an ice cream scoop, I still over-fill sometimes. I guess I just need to be more careful! I have a question regarding the paddle you use in your mixer... does it really eliminate having to scrape down the bowl?? Thanks! Those silicone coated beaters really do work very very well for cake batters. You still have to give a scrape or two, but not nearly as much as with no silicone. Hope this helps. ~ MaryJane
