Oh my GOSH, I live and die for whole grain breads with crunchy seeds in them. But dang, I just got a big order from KAF. If I toast some old fashioned oats in a skillet and get them nice and crunchy, do you think that might simulate the malted wheat flakes fairly well? I'm putting them on my wish list right now, but I can't wait to make this beautiful loaf. Well, the process is a bit more involved than that, I am afraid. You forgot about the malted part!
