Grace, though a different flavor, malted barley flakes would probably contribute a similar degree of texture as malted wheat flakes, so they could be worth a try. As for the 9 Grain Flour Blend, we've more recently swapped in our Whole Grain Flour Blend, which is a combination of white whole wheat, barley, pumpernickel, sorghum, oat, millet, amaranth, teff, and quinoa flours. We don't have exact ratios to share, but you're welcome to experiment with a combo of your own. Just keep in mind that different ratios may very well result in different texture, flavor and/or rise, so we can't guarantee how a make-your-own mix would work.
