Is it necessary to temper Merckens chocolate when dipping like you have in this recipe? Hi Jill, If you melt the Merckens low and slow, you should be able to dip without a problem. The milk chocolate definitely stays a softer consistency than the dark, no real "snap" to it, but a nice solid bite of chocolate. Hope this helps. ~ MaryJane
