I've made these before, but with a different recipe and boy they were delicious. Some people call them Millionaires Shortbread or Homemade Twix. Your recipe looks great I really like how you dip them in chocolate to make them look like a real candy bar. I haven't ever tried using homemade caramel as a filling. I'd check out some recipes online, and in candy making books at the library/bookstore for a soft caramel.
