Being from Israel myself and having brought one of those ovens shown in the photos to Israel for the purpose of baking Pita bread, amongst other things, I can add some tips to this wonderful blog. Luckily for us in Israel, we can purchase wonderful pita bread in every supermarket. Very few people actually make it at home. Instead of topping the pita bread with various items after baking, we actually do it prior to baking - yes, just like a pizza. For the "real" Israeli-Arabic salad, try adding chopped parsley and mint. The "fresh factor" jumps up be ten fold. Bete'avon and Sakhtain!
