Thanks for showing how to do this on a pizza stone. I tried homemade pita *once* using greased baking sheets (b/c parchment won't take a 450--or was it 500?--degree oven) and ended up with lots of smoke in the house, plus a hard-baked coating on my favorite Chicago Metallic sheets that's still there. :-( Now that I see how to do it on a stone, though, I may be tempted to try again.
