Glad this thread was recently revived, even if I did get the answer to my problem (forgot sugar in pumpkin-apple muffin batter) in the first couple paragraphs. Of course then I almost let the rescued muffins bake too long because I was reading every single comment! (Distractability seems to be at the base of all my woes.)
